Mung Beans are prized in Ayurveda and Elique loves them because apart from being so nutritious, they taste great, are easy and fast to cook and are easier to digest than most other beans. Because they have their own lovely flavor they need little fuss. Some Himalayan salt, ghee and digestive spices like coriander, cardamom and cumin are enough.
Mung beans reduce Pitta and Kapha dosha so while they are great for any season, including them in your diet from late winter through the summer, when Pitta and Kapha begin to accumulate and then aggravate the body, is ideal.
Mung beans are wonderful for the eyes (Pitta region) and in Ayurveda are used for fever, burning eyes and ulcers (more Pitta). If your digestion is weak or you are constipated, eat sparingly. Start with a small bit and gradually increase the amount.
